MAKING OF HIMAL KIMCHI
Core Element – Gift from Ancient
The key elements of Kimchi is “salt”. It is the core ingredient to start the Kimchi making process. And Himal Kimchi prefers to use the local regional materials where we are making our products, in Kathmandu, using materials arriving from Himalayan region.
How we filter the salt to make Kimchi
- thin net filtering salt powder
- filtering through 5 layered thin and tight cotton fabric by hot water mixing to make 5% salt water (water 10 liter + salt 500 gram)
- boil for 3~5 minutes, and let it sit to cool and wait for the dust to sink on the bottom
- use the clean to part of the salt water
